My best Chocolate Coconut Mousse

👉 Ingredients:
1-2 scoops Chocolate Plus+ Complete
1 can (400 ml) creamy coconut milk, silky smooth texture with a high fat content
¼ cup cocoa powder
1 cup (tightly packed) soft dried dates, about 18
2-3 drops of vanilla extract

Here is how:
👉 1. Refrigerate the can of coconut milk overnight to solidify and separate. Carefully turn it upside down, open and save the transparent liquid for a smoothie.
👉2. Pit and halve the dates and chop. Make sure to use soft dates.
👉3. Combine dates and 2 rounded tbsp of Coconut milk. Place them in a tall container and blend with an immersion or stick blender. A high speed blender or food processor will also work.
👉4. If you prefer a smoother texture strain the paste to remove the bits of date skin.
👉5. Add remaining coconut milk, Chocolate Plus+ Complete and cocoa powder and blend until smooth. Add vanilla and stir.
👉6. Taste and adjust ingredients as needed.
👉7. Pour into glasses or ramekins and refrigerate for 3-5 hours or until desired texture is achieved.
